Vegetarian Lunch Wrap

Anyone else struggle to find the balance between too much and not enough at lunchtime?
This fast vegetarian lunch idea to keep you comfortably full and energized through the afternoon.
I love these veggies with the warmth of peanut sauce, but add whatever you like for flavor! Sriracha mayo, avocado mayo, teriyaki...all would be amazing!

Ingredients
  

  • 1 10-inch wrap I used MIssion spinach wraps
  • 1/4 cup chickpeas
  • 1/4 avocado
  • Everything Bagel Seasoning To taste
  • 1/4 cup matchstick carrots
  • Broccoli or alfalfa sprouts Add more for more crunch
  • 1 tbs Peanut sauce
  • Spinach leaves As much as you can fit!

Instructions
 

  • Warm up the wrap in the microwave for 15 seconds. This will make it softer and easier to roll.
  • Roughly chop the chickpeas.
  • Mash the avocado. Mix with the chickpeas to create a kind of chunky "guac". Sprinkle with Everything Bagel seasoning to taste.
  • Place "guac" onto wrap.
  • Add carrots, sprouts, and peanut sauce to the wrap.
  • Top with spinach leaves. Add as much as you like here, making sure you leave room to roll it all up.
  • Roll into a burrito and enjoy. Easy!
