Tailgate Chili
Comfort food or party food, this homemade chili will suit your needs. On the thicker side with lots of robust flavor, it has a hearty tomato base, ground beef, and spicy sausage.

- 1 tbs olive oil
- 1 red onion, diced
- 1/2 yellow onion, diced
- 2 tsp minced garlic About 2 cloves
- 1 lb grass-fed ground beef
- 15 oz black beans One can, drained
- 15 oz diced tomatoes One can, do not drain
- 6 oz tomato paste
- 1 cup chicken broth
- 1 orange bell pepper, diced
- 1 yellow bell pepper, diced
- 1 tbs chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 Jalapeño, seeded and diced
- 4 pre-cooked sausages Look for jalapeño cheddar or something similar. I use turkey or chicken.
Sauté the onion in the olive oil in a large pot until just tender.
Add the ground beef to the same pot and cook until beef is browned. Drain off any excess fat.
Add the garlic and stir until fragrant.
Add black beans, diced tomatoes, tomato paste, chicken broth, orange and yellow bell peppers, jalapeño, and spices. Stir it all together and bring to a simmer.
Slice sausages and add to the pot to warm through.
You can serve immediately or leave to simmer another 30 minutes or so.
