Tailgate Chili

Comfort food or party food, this homemade chili will suit your needs. On the thicker side with lots of robust flavor, it has a hearty tomato base, ground beef, and spicy sausage.

Ingredients
  

  • 1 tbs olive oil
  • 1 red onion, diced
  • 1/2 yellow onion, diced
  • 2 tsp minced garlic About 2 cloves
  • 1 lb grass-fed ground beef
  • 15 oz black beans One can, drained
  • 15 oz diced tomatoes One can, do not drain
  • 6 oz tomato paste
  • 1 cup chicken broth
  • 1 orange bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 tbs chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 Jalapeño, seeded and diced
  • 4 pre-cooked sausages Look for jalapeño cheddar or something similar. I use turkey or chicken.

Instructions
 

  • Sauté the onion in the olive oil in a large pot until just tender.
  • Add the ground beef to the same pot and cook until beef is browned. Drain off any excess fat.
  • Add the garlic and stir until fragrant.
  • Add black beans, diced tomatoes, tomato paste, chicken broth, orange and yellow bell peppers, jalapeño, and spices. Stir it all together and bring to a simmer.
  • Slice sausages and add to the pot to warm through.
  • You can serve immediately or leave to simmer another 30 minutes or so.
