Gluten Free Buffalo Chicken Meatballs

Ingredients
  

  • 1 lb ground chicken
  • 1/2 cup grated (NOT shredded!) Parmesan
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 green onions, chopped
  • 1 cup Buffalo sauce

Instructions
 

  • Preheat oven to 375'F. Line a cookie sheet with parchment paper.
  • Combine chicken, Parmesan, egg, garlic and onion powders, and green onion in a large bowl. Mix to combine.
  • Roll mixture into 1-inch balls and place on prepared cookie sheet.
  • Bake for 20 minutes in preheated oven. Keep in mind that this is chicken, not beef, so meatballs will not turn a dark brown when finished. It'll look like a cooked chicken breast on the outside.
  • Remove from oven and toss in a bowl with buffalo sauce. Serve as desired.
